slice the eggplant, put it in the oven, put some passata on top of it. on top of the passata you put some basil, other spices and cheese. repeat until your oven dish is full and then put it in the oven for about half an hour. Eat with some pasta or whatever - yummy.
It takes a lot of time to make this but you can eat from it for a while or make some spare to put in the freezer!
bought this fairtrade tea last week at the fairtrade shop - duh. i also bought some orange mango & forest fruit tea, but they are for my collegues; a small present altogether with some chocolates to say thank you for all the things they did for me and all the patience they had when i was doing my internship with them for three months.
anyways, i'm happy that i bought this black tea with lemon, it's really delicious! it can also be a good idea to make some ice tea out of it, so that's one thing i'll try this summer. the lemon really adds some freshness. also, it's bio & fairtrade, that's really a win win situation! pictures from my adventures in Kenya are coming up soon! happy Friday! - N.
Well hello there! It's already Friday! I've been working three days this week, cleaned my room after a long time, went visiting my best friend for her birthday, went shopping for our party tomorrow, had some time with my grandmother and worked out. It was fun but yesterday i felt so tired, I already got up at 4.30 am to go to work and in the afternoon the tiredness kicked in. I decided to take a nap for an hour and had a lovely but healthy snack afterwards: lots of fruits, a new yoghurt which is an vegetable alternative for cottage cheese and a nut bar. After that i felt so much better, then i enjoyed the sunshine while reading the book i started this week, i'm already half way!
Anyway, in two weeks i'll be leaving for my big adventure and i'm super excited :D
tomorrow's our party to raise some money for the organization which i already mentioned. i'm going to enjoy my super lazy Friday and hope to have a blast tomorrow! Looking forward!

tomorrow will probably the last morning in a while where i'll have such a big breakfast, it's the last day of my internship and i don't look forward to it at all. the colleagues have been so kind to me, i really feel like a part of the team already! i'll buy them lunch tomorrow & bring lots of fresh vegetables, dressings and toppings as a goodbye gift. i also got them lots of chocolate and tea, don't worry ;)
i guess this is my first recipe appearing on this blog! these are the easiest and very delicious banana cookies! step one: mash up three or four bananas in pot step two: mix it with 180 g oatmeal and 80 g coconut flakes or coconut sugar. i also added some speculaas spices with really does the trick. step three: you mix the three ingredients with a spoon and make little cookies out of it. step four: you put the cookies on a plate and when you're ready, you just put them in the oven for 15 minutes on 200°C.

well hello. on Thursday i stayed at home because i had an important presentation at school - which went fine - and in the afternoon i finally got the opportunity to enjoy the weather in Belgium. it was the first sunny day of the week (and i guess also the last haha) and i enjoyed the sun while reading some books on the terrace.
last week, i bought myself this waterbottle from Dopper which is a Dutch design and it's very useful! i'm happy with it, the size is just right and i love the colour. i'll be watching a live comic show tonight with my boyfriend and we'll go for some secondhand shopping in the afternoon.
Weekend, yes indeed! I kinda celebrated this by going to a store in the city nearby where they sell all kinds of food (healthy stuff like granola) without any package. The food is stored in plastic cans and you have to 'tap' the food into a mason jar or weck pot. We brought our own jars and took lots of delicious things home! Unfortunately i don't have any pictures, but here's my ultimate Friday song in return:

I'll be working for school tomorrow and going on a dinnerdate with my lovely boyfriend after i did a quick visit to my best friend, she has some health issues and i want to see her to give her some support (also a long time ago that i saw her, so it's a good combo). On Sunday i'll be 'working' as well, Sunday will probably be the sunniest day of the week - i'll attend an information day in Bruges for my internship.
